These air fryer philly cheesesteak egg rolls are one of my favorite things to make when I want something fun and a little different for dinner or game day snacking.
They’re crispy on the outside, loaded with tender steak, peppers, onions, and melty provolone on the inside. Honestly, it’s hard to stop at just one.

The air fryer does all the heavy lifting here. You get that deep-fried crunch without all the oil, and they come out golden brown every single time.
The whole thing comes together pretty quickly too. You cook the filling on the stove, roll everything up, and let the air fryer do its thing in about 10 minutes.
If you’re a fan of philly cheesesteaks, you’re going to love this version. Same great flavors, just wrapped up in a crispy egg roll shell.
Why You’ll Love This Recipe
Incredibly Crispy Outside and Melty Inside – The air fryer gives these egg rolls a perfectly golden crunch while the provolone melts into the steak filling.

Classic Philly Cheesesteak Flavor in Every Bite – Tender ribeye with sautéed peppers and onions delivers that iconic Philly taste in a fun handheld form.
Perfect Party Snack or Game Day Food – These are the kind of crowd-pleasing bites that disappear from the plate before you even sit down.
Ingredients
- 1 lb Ribeye Steak, thinly sliced
- 1 tablespoon Olive Oil
- 1 medium Green Bell Pepper, thinly sliced
- 1 medium Onion, thinly sliced
- 8 oz Provolone Cheese, cut into strips
- 12 Egg Roll Wrappers
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- Cooking Spray
- Water for sealing
How To Make
Step 1
Heat olive oil in a skillet over high heat. Add steak, bell pepper, and onion. Season with garlic powder, salt, and pepper. Cook for 5-6 minutes until steak is browned and vegetables are tender. Let cool slightly.
Step 2
Place an egg roll wrapper with one corner pointing toward you. Add 2-3 tablespoons of the steak mixture and a strip of provolone cheese in the center.
Step 3
Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner, using water to seal the edge. Repeat with remaining wrappers.
Step 4
Preheat air fryer to 380°F. Spray the basket and egg rolls generously with cooking spray.
Step 5
Arrange egg rolls in a single layer without touching. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Step 6
Let cool for 2 minutes before serving with cheese sauce or your favorite dipping sauce.

Tips
Freeze the Steak Before Slicing
Pop the ribeye in the freezer for about 20-30 minutes before you try to slice it. This firms it up just enough so you can get those paper-thin slices without the meat sliding around on you.
Thin slices are important here because thick chunks of steak won’t fold neatly inside the egg roll wrapper. They’ll poke through and cause the wrapper to tear during air frying.
You want pieces that are roughly bite-sized too, not long strips. That way every bite of the egg roll has steak in it instead of one big piece bunched up in the middle.
Let the Filling Cool Before You Roll
After you cook the steak and veggies, spread the mixture out on a plate and let it cool for at least 10 minutes. If you try to roll it while it’s still hot, the steam will make the egg roll wrappers soggy and they’ll tear apart in your hands.

Soggy wrappers also won’t crisp up properly in the air fryer. You’ll end up with a chewy, doughy texture instead of that golden crunch you’re going for.
I’ve found that draining off any extra liquid from the skillet before you start rolling also makes a big difference. Too much moisture is the number one reason egg rolls turn out soft instead of crispy.
Roll Them as Tight as You Can
When you’re wrapping the egg rolls, pull each fold snug against the filling before moving to the next step. Any air pockets inside will cause the wrapper to puff up and separate from the filling in the air fryer.
A loose roll also tends to open up at the seam while it cooks. Use your finger to spread a thin line of water along the top corner and the edges of the side flaps before you seal them – this acts like glue and keeps everything locked in place.

Frequently Asked Questions
Can I use a different type of steak besides ribeye?
Ribeye is the classic choice for Philly cheesesteaks because of its rich flavor and tenderness, but you can definitely use sirloin or shaved steak from the deli counter if that is easier to find or more budget-friendly.
If you want super thin slices at home, pop your steak in the freezer for about 20-30 minutes before slicing – it firms up just enough to let you get those paper-thin pieces without a struggle.
