- 1 lb Shaved Ribeye Steak
- 1 tablespoon Olive Oil
- 1 medium Onion, thinly sliced
- 1 medium Green Bell Pepper, thinly sliced
- 2 cloves Garlic, minced
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Garlic Powder
- 4 slices Provolone Cheese, chopped
For the Egg Rolls
- 8 Egg Roll Wrappers
- Cooking Spray
- 1 tablespoon Water (for sealing)
How To Make
Step 1
Heat the olive oil in a large skillet over medium-high heat. Add the sliced onion and green bell pepper and saute for 4 to 5 minutes until they are soft and lightly caramelized.
Step 2
Add the shaved ribeye steak and minced garlic to the skillet. Season with the salt, black pepper, and garlic powder. Cook, stirring and breaking the meat apart, for 4 to 5 minutes until the steak is fully cooked and no longer pink.
Remove the skillet from the heat. Scatter the chopped provolone cheese over the hot meat and stir until it melts and gets gooey throughout the filling. Let the mixture cool for 5 minutes so it is easier to handle.
Step 3
Lay an egg roll wrapper on a clean surface in a diamond shape. Place about 2 to 3 tablespoons of the cheesesteak filling in a line across the center. Fold the bottom corner up over the filling, fold the two side corners in tightly, then roll upward toward the top corner. Brush the top corner with a dab of water to seal the edge. Repeat with all remaining wrappers.

Preheat the air fryer to 390 degrees F for 3 minutes.

Lightly spray the egg rolls on all sides with cooking spray and place them seam-side down in the air fryer basket in a single layer. Do not stack them. Cook at 390 degrees F for 5 minutes.

Drain the Filling Before Wrapping
After the steak, peppers, and onions are done cooking, there will be juices sitting in the skillet. If you wrap that liquid into the egg rolls, the wrappers will get soggy and they won’t crisp up properly in the air fryer.
Before you add the cheese, tilt the skillet and use a spoon to remove as much liquid as you can. You want the filling on the drier side so the egg rolls come out with that crunchy shell.
Let the Filling Cool Before Rolling
The recipe says 5 minutes, but honestly give it closer to 10 if you can. If the filling is too hot, it will make the egg roll wrappers soft and damp as you try to fold them.

Spread the filling out on a plate or sheet pan so it cools faster. Cooler filling is also way easier to portion and roll tightly without tearing the wrappers.
Roll Them Tight With No Air Pockets
When you’re folding the egg rolls, press the wrapper snugly around the filling as you roll. Any air pockets trapped inside will cause the wrapper to puff up and possibly crack open in the air fryer.
Think of it like wrapping a burrito – tuck that bottom corner firmly over the filling and pull it back toward you slightly before folding the sides in. A tight roll also keeps the cheese from leaking out while it cooks.
