Tips
Pat the Cod Really Dry Before Brushing
Cod holds a lot of water, and if you skip drying it well, the butter mixture will just slide off into the basket.
I press each fillet between paper towels for a good 30 seconds on both sides. You want the surface to feel almost tacky, not wet or slippery.
From my experience, this one step is what makes the difference between a golden top and a sad, pale, watery fish.
Pick Fillets That Are the Same Thickness
Cod fillets often come in funny shapes, with one thick end and one thin tail end. The thin parts will be done way before the thick parts, so you end up with dry edges and raw middles.

I recommend picking fillets that are evenly thick all the way across, around 1 inch if you can find them. If yours have super thin tail ends, just fold the thin part under itself so the whole piece sits at one even thickness.
Melt the Butter but Don’t Let It Get Hot
You want the butter just barely melted, soft and pourable but not steaming. If the butter is too hot when you add the garlic and lemon juice, the garlic starts to cook and turns bitter before the fish even hits the air fryer.
My favorite trick here is to melt the butter in 10-second bursts in the microwave and stop as soon as there’s still one tiny piece left floating in it. The leftover heat finishes melting it without cooking anything.
