Ingredients
  • 2 cans Chickpeas, drained, rinsed, and patted very dry (15 oz each)
  • 2 tbsp Olive Oil
  • 1/3 cup Grated Parmesan Cheese
  • 1 tsp Garlic Powder
  • 1/2 tsp Italian Seasoning
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Salt
  • 2 cups Baby Spinach
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup Tzatziki Sauce
  • Lemon Wedges, for serving
Instructions
  • Toss the dried chickpeas with olive oil, parmesan cheese, garlic powder, italian seasoning, smoked paprika, and salt until evenly coated.
  • Preheat the air fryer to 390°F (200°C). Spread the chickpeas in a single layer in the basket.
  • Air fry for 14 to 16 minutes, shaking the basket every 5 minutes, until the chickpeas are deeply golden and crunchy.
  • Divide baby spinach and cherry tomatoes among serving bowls.
  • Top with the hot crispy parmesan chickpeas, drizzle with tzatziki sauce, and serve with lemon wedges.
