These air fryer portobello mushrooms are one of my favorite simple side dishes. They come out tender, juicy, and packed with flavor every single time.

The marinade is a mix of balsamic vinegar, olive oil, garlic, and a few seasonings. It soaks into the mushrooms and gives them this rich, slightly tangy taste that’s hard to resist.

  • 4 large Portobello Mushroom Caps
  • 3 tbsp Balsamic Vinegar
  • 3 tbsp Extra Virgin Olive Oil
  • 2 cloves Garlic, minced
  • 1 tsp Dried Italian Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Red Pepper Flakes
  • 1 tbsp Fresh Parsley, chopped, for garnish

How To Make

Step 1

Clean the portobello mushroom caps by wiping them gently with a damp paper towel. Remove the stems and use a spoon to carefully scrape out the dark gills from the underside. Removing the gills prevents excess moisture and gives a cleaner presentation.

Step 2

In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, minced garlic, italian seasoning, salt, black pepper, and red pepper flakes.

Step 3

Place the mushroom caps in a shallow dish gill-side up and spoon the marinade over them, making sure it pools into the cavities. Let them marinate for 10 to 15 minutes, spooning the marinade over once or twice during that time.

Step 4

Preheat the air fryer to 375 degrees F. Place the mushroom caps in the basket gill-side up. Spoon any remaining marinade from the dish over the tops.

Step 5

Air fry for 8 to 10 minutes, until the mushrooms are tender, juicy, and slightly caramelized around the edges. The caps should be soft when pressed gently but still holding their shape.

Tips

Scrape Out the Gills Completely

Use a regular spoon and gently scrape the dark gills out in one direction. They come off pretty easily if you work from the center outward.

If you skip this step, the gills release a lot of dark liquid during cooking. That liquid pools inside the cap and makes the mushroom soggy instead of caramelized and tender.

It also makes the marinade look murky and dark instead of that nice glossy balsamic coating you want.

Don’t Wash the Mushrooms Under Water

Portobellos are like sponges. If you run them under the faucet or soak them, they absorb a ton of water and you’ll end up steaming them in the air fryer instead of getting that caramelized edge.

A damp paper towel is all you need. Just wipe the top of each cap gently to remove any dirt. That’s it.

Let Them Marinate Gill-Side Up

When you place the caps in the dish, make sure the hollow side faces up so the marinade pools right into the cavity. That’s where all the flavor soaks in.

Come back once or twice during those 10-15 minutes and spoon the marinade that’s sitting in the dish back over the mushrooms. The caps absorb more each time you do this, and you’ll taste the difference.
