Tips
Don’t Overmix the Meat
When you’re combining everything in the bowl, use your hands and mix just until the ingredients are evenly distributed. You should still see little bits of feta and spinach throughout.
If you keep working the meat after that, the proteins in the turkey tighten up and you’ll end up with dense, rubbery burgers instead of juicy ones.
Think of it like this – once you can’t see any pockets of plain turkey left, stop mixing.
Squeeze the Moisture Out of the Spinach
Before you chop the spinach and add it to the mix, grab it in your fist and give it a good squeeze over the sink. Fresh spinach holds a surprising amount of water.

That extra moisture will make the burger mixture too wet, and your patties won’t hold together well in the air fryer. They can fall apart or steam instead of getting that nice sear on the outside.
Make Your Patties Wider Than the Bun
Shape your patties about half an inch wider than whatever bun you plan to use. Turkey burgers shrink as they cook, and they shrink inward more than beef burgers do.
If you form them to the exact size of your bun now, they’ll end up noticeably smaller after cooking. That little indent in the center also helps, but the extra width is what really keeps them bun-sized.
