- 4 Mahi Mahi Fillets (6 oz each)
- 2 tbsp Olive Oil
- 1 tbsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dried Thyme
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Black Pepper

Pat mahi mahi fillets dry and brush both sides with olive oil.
Step 2
In a small bowl, combine paprika, garlic powder, onion powder, dried thyme, cayenne pepper, black pepper, and salt.

Tips
Dry the Fish Really Well
This is the most important step for getting that dark, flavorful blackened crust. Use paper towels and press firmly on each fillet to remove as much moisture as possible.
If the surface is still wet, the spice mixture won’t stick properly and it’ll steam off in the air fryer instead of forming that crust. Spend a good 30 seconds per side pressing down with fresh paper towels.
Press the Seasoning In
Don’t just sprinkle the spice mix on top. After coating each fillet, use your fingers to firmly press the seasoning into the fish on both sides. You want it almost embedded into the surface.

This keeps the spices from blowing around in the air fryer fan and gives you that solid blackened layer. The olive oil you brushed on acts like glue here, so make sure you coated both sides evenly before adding the spices.
Don’t Overcrowd the Basket
Leave about an inch of space between each fillet so the hot air can circulate around every piece. If the fillets are touching or overlapping, the sides won’t cook evenly and you won’t get that crust all the way around.
Depending on your air fryer size, you may need to cook in two batches. It’s better to do two rounds than to cram all four fillets in at once and end up with soggy spots.
