- 1 lb Large Shrimp, peeled and deveined
- 1/2 cup Cornstarch
- 2 Large Eggs, beaten
- 1 cup Panko Breadcrumbs
- 1/2 cup Mayonnaise
- 3 tbsp Sweet Chili Sauce

Pat shrimp dry and season with salt and pepper. Set up three bowls: cornstarch in first, beaten eggs in second, and panko breadcrumbs in third.

Dry Your Shrimp Really Well
This is the most important step for getting crispy shrimp. Use paper towels and press down firmly on each side of every shrimp until there’s zero visible moisture left.
If the shrimp are even a little wet, the cornstarch turns into a gummy paste instead of a dry coating. That means the egg and panko won’t stick properly and you’ll get patches that fall off in the air fryer.
Spread them out on a paper towel-lined plate after patting them down and let them sit for a couple minutes while you set up your breading station. That extra time helps any remaining surface moisture evaporate.
Press the Panko On Firmly
Don’t just dip the shrimp into the panko and hope it sticks. Use your hand to really press the breadcrumbs into the shrimp on all sides so they’re packed on tight.
