Air Fryer Lasagna

This air fryer lasagna is one of my favorite ways to make lasagna without heating up the whole oven. It comes out bubbly, cheesy, and layered just like the classic version.

The best part is that it’s perfectly sized for two people, or even just for yourself if you want leftovers the next day.

You’ll make a simple meat sauce with Italian sausage and marinara, layer it up with a creamy ricotta mixture and mozzarella, and let the air fryer do the rest.

It takes about 30 minutes in the air fryer, and the result is honestly just as good as a full-sized lasagna. The cheese on top gets perfectly golden and bubbly.

Ingredients

For the Meat Sauce

  • 1/2 lb Italian Sausage
  • 1/4 cup Diced Onion
  • 2 cloves Garlic, Minced
  • 1 1/4 cups Marinara Sauce
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

For the Cheese Mixture

  • 3/4 cup Ricotta Cheese
  • 1/4 cup Grated Parmesan Cheese
  • 1 Egg Yolk
  • 1 tbsp Fresh Parsley, Chopped

For Assembly

  • 6 sheets Oven-Ready Lasagna Noodles
  • 1 cup Shredded Mozzarella Cheese

How To Make

Step 1

Heat a skillet over medium heat and cook the italian sausage, breaking it apart with a wooden spoon, until browned and no longer pink. Add the diced onion and garlic and cook for 2 more minutes until softened and fragrant.

Step 2

Stir in the marinara sauce, italian seasoning, salt, and black pepper. Let the sauce simmer gently for 3 to 4 minutes, then remove from heat and set aside.

Step 3

In a small bowl, combine the ricotta cheese, grated parmesan, egg yolk, and fresh parsley. Stir until smooth and well blended.

Step 4

Lightly grease a 6-inch round or square baking pan that fits inside your air fryer. Break the oven-ready lasagna noodles to fit the shape of the pan as needed.

Step 5

Spread a thin layer of meat sauce on the bottom of the pan. Add a layer of noodle pieces, then spread half of the ricotta mixture over them, sprinkle some mozzarella, and spoon on more meat sauce.

Repeat the layers one more time, ending with the remaining meat sauce and a final generous layer of mozzarella on top.

Step 6

Cover the pan tightly with aluminum foil. Place it in the air fryer and cook at 350 degrees F for 20 minutes. Remove the foil and cook for an additional 5 to 7 minutes until the cheese is golden brown and bubbly.

Step 7

Carefully lift the pan out of the air fryer and let the lasagna rest for at least 10 minutes before slicing. This rest is essential so the layers set properly and hold together when served.

Tips

Break the Noodles Before You Start Layering

Oven-ready lasagna noodles don’t come in a shape that fits a small 6-inch pan, so you’ll need to snap and piece them together like a puzzle. Do this step before you start assembling so you know exactly how many pieces you need for each layer.

Don’t stress about making them fit perfectly. Small gaps are totally fine because the noodles expand as they absorb moisture from the sauce during cooking. Just make sure the pieces cover most of the layer without overlapping too much.

Use Enough Sauce on the Bottom Layer

That first layer of meat sauce on the bottom of the pan is more important than you might think. The oven-ready noodles need moisture to soften properly, and the bottom layer is where they’re most likely to stay hard and chewy if there isn’t enough liquid.

Don’t just do a light smear. Spread a solid layer of sauce so the noodles sitting on top of it have something to absorb. This is what keeps the bottom from turning out dry and crunchy.

Don’t Skip the Foil

Covering the pan tightly with foil for the first 20 minutes is what actually cooks the lasagna through. The foil traps steam inside, and that steam is what softens the oven-ready noodles and melts everything together.

If you skip it or leave it loose, the top will brown way too fast while the noodles inside stay hard. Press the foil down snugly around the edges of the pan so the steam stays trapped.

When you remove the foil for the last 5-7 minutes, that’s just to get the golden bubbly top. All the real cooking happens while it’s covered.
