Preheat the air fryer to 380°F (190°C) for 3 minutes. There is no need to thaw the samosas - cooking them from frozen gives the best crispy results.
Lightly spray the frozen samosas on all sides with olive oil spray. This is the key step that transforms them from dry and dull to golden and flaky.
Place the samosas in a single layer in the air fryer basket, making sure they are not touching or overlapping. If they don't all fit, cook in batches for the best texture.
Air fry at 380°F for 10 to 12 minutes, flipping them over carefully at the halfway mark. They are ready when the pastry is deep golden brown, crispy, and flaky all the way through.
While the samosas cook, prepare the mint yogurt dip. In a small bowl, combine the greek yogurt, chopped mint, cilantro, lemon juice, ground cumin, salt, and cayenne pepper. Stir until everything is well incorporated and smooth.
Transfer the hot samosas to a serving plate and let them cool for just 1 to 2 minutes - the filling will be very hot inside. Serve with the mint yogurt dip on the side for dipping.
