Lightly brush one side of each flour tortilla with olive oil. This will be the bottom of your pizza and ensures a perfectly crispy crust.
Flip the tortillas oiled-side down and spread about 2 tablespoons of pizza sauce over the top of each one, leaving a small border around the edges.
Sprinkle a generous layer of shredded mozzarella cheese over the sauce on each tortilla. Top with mini pepperoni slices, sliced black olives, and a pinch of italian seasoning.
Preheat the air fryer to 375 degrees F for 2 minutes. Carefully place one or two tortilla pizzas in the air fryer basket in a single layer - do not overlap them.
Air fry at 375 degrees F for 4 to 5 minutes, until the cheese is bubbly and melted and the tortilla edges are golden and crispy. Watch closely as they can go from perfect to burnt quickly.
Remove each tortilla pizza carefully using a spatula. Repeat with the remaining pizzas. Garnish with fresh basil leaves and red pepper flakes if desired. Let cool for 1 minute before slicing into quarters and serving.
