Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Spread the mixture evenly on 3 slices of brioche bread, then top with the remaining 3 slices to create sandwiches. Cut each sandwich into 4 squares.
In a shallow bowl, whisk together the eggs, milk, and 1/2 teaspoon cinnamon. In a separate bowl, combine the granulated sugar and 1 teaspoon cinnamon.
Dip each stuffed bite into the egg mixture, letting it soak for a few seconds on each side. Don't over-soak or they will get too soggy.
