Ingredients
  

  • 6 Large Eggs
  • 1/4 cup Milk
  • 1/4 cup Shredded Pepper Jack Cheese
  • 1/4 cup Black Beans, drained and rinsed
  • 1/4 cup Roasted Red Peppers, diced
  • 2 tbsp Green Onions, sliced
  • 1/4 tsp Cumin
  • 1/4 tsp Chili Powder
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper
  • Salsa, for serving

Instructions
 

  • In a large bowl, whisk together eggs, milk, cumin, chili powder, salt, and pepper until well combined.
  • Stir in the shredded pepper jack cheese, black beans, roasted red peppers, and green onions.
  • Divide the mixture evenly among 6 silicone muffin cups, filling each about 3/4 full.
  • Preheat the air fryer to 310°F (155°C). Place the filled cups in the basket.
  • Air fry for 12 to 14 minutes until the egg cups are puffed and fully set in the center.
  • Let cool for 2 minutes, then remove from the cups and serve topped with a spoonful of salsa.
