Instructions
In a large bowl, whisk together eggs, milk, cumin, chili powder, salt, and pepper until well combined.
Stir in the shredded pepper jack cheese, black beans, roasted red peppers, and green onions.
Divide the mixture evenly among 6 silicone muffin cups, filling each about 3/4 full.
Preheat the air fryer to 310°F (155°C). Place the filled cups in the basket.
Air fry for 12 to 14 minutes until the egg cups are puffed and fully set in the center.
Let cool for 2 minutes, then remove from the cups and serve topped with a spoonful of salsa.
