These bite-sized pecan pie treats are perfect for satisfying your sweet tooth without committing to a whole slice. They're crispy, gooey, and totally irresistible.
In a small bowl, stir together the melted butter, brown sugar, corn syrup, egg yolk, vanilla extract, and a pinch of salt until well combined. Fold in the chopped pecans.
Roll the puff pastry out slightly on a floured surface. Cut into 12 squares roughly 3 inches each.
Press each pastry square into a lightly greased silicone muffin mold or small ramekins, forming a little cup shape. Spoon the pecan filling evenly into each pastry cup and top each with a pecan half.
Preheat the air fryer to 325F. Place the molds in the air fryer and bake for 12-14 minutes until the pastry is puffed and golden and the filling is set and bubbly.
Let them cool in the mold for 5 minutes before carefully removing. The filling will firm up as they cool. Serve warm or at room temperature.
