Cut each block of halloumi into thick fry-shaped sticks, roughly 3 inches long and 1/2 inch wide. Pat them completely dry with paper towels to help the coating stick.
Set up a breading station with three shallow dishes. Place the flour in the first dish. Beat the eggs in the second dish. In the third dish, combine the panko breadcrumbs, smoked paprika, garlic powder, and black pepper and toss to mix evenly.
Dredge each halloumi stick in flour, shaking off any excess. Dip it into the beaten egg, then press it firmly into the seasoned panko mixture, making sure all sides are well coated.
Preheat the air fryer to 400 degrees F for 3 minutes. Lightly spray the basket with olive oil spray.
Arrange the coated halloumi fries in a single layer in the air fryer basket, leaving a little space between each one. Spray the tops lightly with olive oil spray. Work in batches if necessary.
Air fry at 400 degrees F for 8 to 10 minutes, flipping the fries halfway through, until they are deeply golden and crispy on all sides.
Transfer the halloumi fries to a serving plate. Drizzle with honey, scatter fresh mint leaves on top, and serve immediately while hot and gooey on the inside.
