Air Fryer Egg Bites

Ingredients
  • 6 large Eggs
  • 1/3 cup Cottage Cheese
  • 1/4 cup Shredded Gruyere Cheese
  • 4 slices Bacon, cooked and crumbled
  • 2 tbsp Chives, chopped
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • Cooking Spray
Instructions
  • In a blender, combine the eggs, cottage cheese, shredded gruyere, salt, and black pepper. Blend on high for 20 to 30 seconds until completely smooth and frothy.
  • Spray a silicone egg bite mold (7-cup size fits most air fryers) generously with cooking spray. Divide the crumbled bacon and chives evenly among the mold cups.
  • Pour the blended egg mixture over the bacon and chives, filling each cup about three-quarters full. The egg bites will puff up as they cook.
  • Place the silicone mold in the air fryer basket. Air fry at 300°F for 10 to 12 minutes, until the egg bites are puffed, set in the center, and lightly golden on top.
  • Let the egg bites cool in the mold for 2 to 3 minutes, then gently pop them out. They will deflate slightly as they cool, which is perfectly normal.
  • Serve warm as a protein-packed breakfast or meal prep them for the week. They reheat beautifully in the microwave for 30 seconds.
