In a blender, combine the eggs, cottage cheese, shredded gruyere, salt, and black pepper. Blend on high for 20 to 30 seconds until completely smooth and frothy.
Spray a silicone egg bite mold (7-cup size fits most air fryers) generously with cooking spray. Divide the crumbled bacon and chives evenly among the mold cups.
Pour the blended egg mixture over the bacon and chives, filling each cup about three-quarters full. The egg bites will puff up as they cook.
Place the silicone mold in the air fryer basket. Air fry at 300°F for 10 to 12 minutes, until the egg bites are puffed, set in the center, and lightly golden on top.
Let the egg bites cool in the mold for 2 to 3 minutes, then gently pop them out. They will deflate slightly as they cool, which is perfectly normal.
Serve warm as a protein-packed breakfast or meal prep them for the week. They reheat beautifully in the microwave for 30 seconds.
