These crispy zucchini chips are perfectly golden and addictively crunchy. They make a fantastic snack or side dish the whole family will love.

Ingredients
  

  • 2 medium Zucchini
  • 1/2 cup All-Purpose Flour
  • 2 large Eggs, beaten
  • 1 cup Panko Breadcrumbs
  • 1/3 cup Grated Parmesan Cheese
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • Cooking Spray
  • Ranch Dressing, for dipping

Instructions
 

  • Slice the zucchini into 1/4-inch thick rounds and lay them on paper towels. Pat them very dry, pressing to remove moisture.
  • Set up a breading station. Place flour in one shallow dish, beaten eggs in a second, and mix panko, parmesan, garlic powder, italian seasoning, salt, and pepper in a third.
  • Dredge each zucchini round in flour, dip in egg, and press into the panko mixture to coat both sides evenly.
  • Preheat the air fryer to 400°F (200°C). Spray the basket with cooking spray. Arrange the zucchini chips in a single layer and spray the tops lightly with cooking spray.
  • Cook at 400°F for 8 to 10 minutes, flipping halfway through, until golden brown and crispy.
  • Serve immediately with ranch dressing for dipping.
