Slice the zucchini into 1/4-inch thick rounds and lay them on paper towels. Pat them very dry, pressing to remove moisture.
Set up a breading station. Place flour in one shallow dish, beaten eggs in a second, and mix panko, parmesan, garlic powder, italian seasoning, salt, and pepper in a third.
Dredge each zucchini round in flour, dip in egg, and press into the panko mixture to coat both sides evenly.
Preheat the air fryer to 400°F (200°C). Spray the basket with cooking spray. Arrange the zucchini chips in a single layer and spray the tops lightly with cooking spray.
Cook at 400°F for 8 to 10 minutes, flipping halfway through, until golden brown and crispy.
Serve immediately with ranch dressing for dipping.
