Ingredients
  • 2 large Avocados (firm, not overripe)
  • 1 cup Panko Breadcrumbs
  • 1/2 cup Parmesan Cheese (grated)
  • 2 large Eggs
  • 1/2 cup All-Purpose Flour
  • 1 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • Cooking Spray
Instructions
  • Cut avocados in half, remove pit, and slice each half into 4-5 wedges. Carefully peel off skin.
  • Set up three bowls: flour in first bowl, beaten eggs in second bowl, and panko mixed with parmesan, paprika, garlic powder, and salt in third bowl.
  • Coat each avocado wedge in flour, dip in egg, then press into panko mixture to coat completely.
  • Spray air fryer basket with cooking spray and arrange avocado fries in single layer without touching.
  • Air fry at 400°F for 8-10 minutes until golden and crispy. Serve immediately with ranch or chipotle mayo for dipping.
