Peel the apples if desired, then core and cut them into 1/2-inch thick wedges. Place them in a large bowl and toss with the lemon juice to prevent browning.
In a small bowl, mix together the melted butter, brown sugar, cinnamon, nutmeg, salt, and vanilla extract until well combined. Pour the mixture over the apple wedges and toss until every piece is evenly coated.
