Start by preheating your air fryer to 400F (200C). Then, cut the chicken breasts in half (lengthwise).
Place them on a cutting board, cover them with plastic wrap, and pound the chicken with a mallet until it is a quarter of an inch thick.
Season the meat with salt, pepper, and smoked paprika.
Beat the egg and 1 1/2 tablespoons of lemon juice in a mixing bowl. Then, combine the cheese and breadcrumbs in another bowl.
Dip the chicken into the egg, and then cover with the breadcrumb mixture.
Spray the air fryer basket with olive. Place two of the chicken halves, and spray them with more cooking spray.
Air fry for 7-9 minutes, until golden brown. Turn them halfway through cooking. Repeat the process with the remaining chicken.
