Ingredients
For The Chicken
  • 2 (6-8oz) Chicken Breasts (boneless)
  • 1 Egg (large)
  • 1/2 cup Breadcrumbs
  • 2 1/2 tablespoons Grated Parmesan and Romano Cheese
  • 1/4 teaspoon Black Pepper
  • 1 1/2 tablespoon Lemon Juice (fresh)
  • 1/4 teaspoon Smoked Paprika
For The Sauce
  • 4 cloves Garlic (minced)
  • 1/2 cup Chicken Broth
  • 1/4 cup Lemon Juice
  • 1/2 cup White Wine
  • 1/2 Lemon Zest
  • 2 1/2 tablespoons Capers (drained)
  • 5 tablespoons Butter (unsalted)
  • 2 tablespoons Flour
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Salt
Instructions
  • Start by preheating your air fryer to 400F (200C). Then, cut the chicken breasts in half (lengthwise).
  • Place them on a cutting board, cover them with plastic wrap, and pound the chicken with a mallet until it is a quarter of an inch thick.
  • Season the meat with saltpepper, and smoked paprika.
  • Beat the egg and 1 1/2 tablespoons of lemon juice in a mixing bowl. Then, combine the cheese and breadcrumbs in another bowl.
  • Dip the chicken into the egg, and then cover with the breadcrumb mixture.
  • Spray the air fryer basket with olive. Place two of the chicken halves, and spray them with more cooking spray.
  • Air fry for 7-9 minutes, until golden brown. Turn them halfway through cooking. Repeat the process with the remaining chicken.
