Slice each chicken breast in half horizontally to create 4 thin cutlets. Season both sides with salt and pepper.
Set up a breading station with three shallow dishes: flour in the first, beaten eggs in the second, and a mixture of panko breadcrumbs, parmesan cheese, italian seasoning, and garlic powder in the third.
Dredge each cutlet in flour, dip in egg, then press firmly into the breadcrumb mixture to coat both sides evenly.
Preheat the air fryer to 375°F (190°C). Place the breaded cutlets in a single layer in the basket and spray generously with cooking spray.
Air fry for 8 minutes, flip, spray the other side, and cook for 5 more minutes until golden and cooked through.
Spoon marinara sauce over each cutlet, top with shredded mozzarella, and air fry for 2 more minutes until the cheese is melted and bubbly.
Garnish with fresh basil and serve immediately.
