In a small bowl, whisk together the maple syrup, dijon mustard, apple cider vinegar, black pepper, and cayenne pepper until smooth and well combined.
Preheat the air fryer to 370 degrees F. Lightly spray the basket with cooking spray to prevent sticking.
Arrange the canadian bacon slices in a single layer in the basket. If your air fryer is smaller, work in batches rather than stacking the slices. Brush the tops of each slice generously with about half of the maple-dijon glaze.
