In a large bowl, combine the ground pork, maple syrup, rubbed sage, salt, black pepper, garlic powder, onion powder, dried thyme, cayenne pepper, and ground nutmeg. Mix everything together with your hands until the seasonings are evenly distributed throughout the meat, but avoid overworking it.
Divide the mixture into 8 equal portions. Shape each one into a patty about 3 inches wide and 1/2 inch thick. Press a small dimple into the center of each patty with your thumb to help them cook flat and prevent puffing up.
Preheat the air fryer to 370 degrees F. Place the sausage patties in a single layer in the basket, leaving a little room between each one. You may need to cook in two batches depending on the size of your air fryer.
Air fry for 5 minutes, then flip each patty carefully. Cook for another 4 to 5 minutes until the patties are golden brown on both sides and cooked through to an internal temperature of 160 degrees F.
