Peel the bananas and slice each one in half lengthwise. The bananas should be ripe but still firm enough to hold their shape during cooking.
Brush the cut sides of each banana half lightly with melted coconut oil. In a small bowl, mix together the brown sugar, ground cinnamon, and a pinch of salt. Sprinkle this mixture evenly over the cut sides of the bananas.
Preheat the air fryer to 380 degrees F. Place the banana halves in the air fryer basket cut-side up in a single layer. You may need to work in batches.
Air fry at 380 degrees F for 5 to 7 minutes, until the bananas are golden and caramelized on the outside and soft and warm throughout. Do not flip them.
Carefully remove the bananas using a spatula. Serve immediately over a scoop of vanilla ice cream, drizzled with honey and topped with chopped toasted pecans if desired. The caramelized brown sugar creates a beautiful toffee-like crust.
