While the mushrooms cook, whisk together balsamic vinegar, honey, soy sauce, and fresh thyme in a small bowl.
Transfer the hot mushrooms to a serving bowl, pour the balsamic glaze over them, and toss until well coated. Garnish with fresh parsley and serve as a side dish or over grilled steak.
