Tips

Use Silicone Cups, Not Paper

Paper or foil muffin liners won’t work well here because the egg mixture is liquid and will seep right through the paper. Silicone muffin cups are the way to go since nothing sticks to them and the egg cups pop right out.

If your silicone cups are on the thinner side, you can give them a very light spray of cooking oil just to be safe. But most of the time, silicone releases the egg cups perfectly on its own.

Whisk the Eggs Really Well

This is also the step where the cumin, chili powder, salt, and pepper go in. Whisking the spices into the liquid base first means every single cup will be seasoned the same, instead of one cup getting all the cumin and another getting none.

Fill Each Cup to Three-Quarters

It’s important not to fill the cups all the way to the top. The eggs puff up quite a bit as they cook in the air fryer, and if you overfill them the mixture will spill over the edges and make a mess in your basket.

Filling to about three-quarters full gives the eggs enough room to rise without overflowing. If you have leftover mixture after filling six cups, just grab an extra silicone cup instead of cramming it all in.

Try to divide the mix-ins evenly too. Give the bowl a good stir right before you pour so the beans and peppers don’t all sink to the bottom.
