Tips
Dry the Zucchini Really Well
This is the single most important step in the whole recipe. Zucchini holds a ton of water, and if that moisture stays on the surface, your coating will turn soggy instead of crispy no matter what you do.
After you cut the sticks, lay them out on a layer of paper towels and press down firmly with more paper towels on top. Spend a good minute or two on this and don’t rush it.
If you want to go the extra mile, sprinkle a tiny bit of salt on the cut sticks and let them sit for about 10 minutes. The salt pulls out even more moisture, and then you pat them dry. Just skip the salt in the breadcrumb mixture if you do this so things don’t get too salty.

Press the Breadcrumbs On
Don’t just dip the zucchini into the panko mixture and call it done. You need to actually press the breadcrumbs firmly onto each stick with your fingers so they stick and stay put during cooking.

Don’t Crowd the Basket
