- 1 sheet Puff Pastry, thawed
- 3 tbsp Honey
- 1/4 cup Chopped Walnuts
- 1 tsp Fresh Thyme Leaves
- 1 large Egg, beaten
- 1 pinch Flaky Sea Salt

How To Make
Step 1
Unfold the thawed puff pastry on a lightly floured surface and roll it out just enough to smooth the seams. Place the brie wheel in the center of the pastry.
Step 2
Drizzle the top of the brie with honey, then scatter the chopped walnuts and fresh thyme leaves over it. Press the toppings gently so they stay in place.
Step 3
Fold the puff pastry up and over the brie, pulling opposite corners toward the center. Pinch and press the seams together tightly to seal the brie completely inside. Trim away any excess pastry if it becomes too thick in one spot.
Flip the wrapped brie seam-side down and brush the entire surface with beaten egg.

Preheat the air fryer to 340 degrees F for 3 minutes. Line the basket with a small piece of parchment paper, then place the wrapped brie on top seam-side down.

Tips
Thaw the Puff Pastry the Right Way
Take the puff pastry out of the freezer and let it thaw in the fridge overnight, or on the counter for about 30-40 minutes. You want it cold but flexible enough to unfold without cracking.
If it’s too warm and soft, it gets sticky and hard to work with, and the butter in the pastry starts to melt. That means less puff when it bakes. If it cracks when you unfold it, it’s still too cold – give it a few more minutes.
Seal the Pastry Tightly or the Cheese Will Leak
This is the most important step in the whole recipe. When you fold the pastry up around the brie, make sure every seam is pinched together completely with no gaps at all. Even a tiny opening will let the melted cheese escape during cooking.

After you pinch the seams, press them down firmly with your fingers. Then when you flip it seam-side down, the weight of the brie helps keep everything sealed shut while it cooks.

Frequently Asked Questions
Can I use a different nut or leave the walnuts out entirely?
Absolutely. Pecans and almonds work really well as a substitute and give you a similar crunch. You can also use pistachios for a slightly different flavor.
