  • 1 (8 oz) wheel Brie Cheese
  • 1 sheet Puff Pastry, thawed
  • 3 tbsp Honey
  • 1/4 cup Chopped Walnuts
  • 1 tsp Fresh Thyme Leaves
  • 1 large Egg, beaten
  • 1 pinch Flaky Sea Salt
  • Crackers and Sliced Baguette, for serving

How To Make

Step 1

Unfold the thawed puff pastry on a lightly floured surface and roll it out just enough to smooth the seams. Place the brie wheel in the center of the pastry.

Step 2

Drizzle the top of the brie with honey, then scatter the chopped walnuts and fresh thyme leaves over it. Press the toppings gently so they stay in place.

Step 3

Fold the puff pastry up and over the brie, pulling opposite corners toward the center. Pinch and press the seams together tightly to seal the brie completely inside. Trim away any excess pastry if it becomes too thick in one spot.

Thaw the Puff Pastry the Right Way

Take the puff pastry out of the freezer and let it thaw in the fridge overnight, or on the counter for about 30-40 minutes. You want it cold but flexible enough to unfold without cracking.

If it’s too warm and soft, it gets sticky and hard to work with, and the butter in the pastry starts to melt. That means less puff when it bakes. If it cracks when you unfold it, it’s still too cold – give it a few more minutes.
