If you’ve never had a scotch egg before, you’re in for a treat. It’s basically a soft-boiled egg wrapped in seasoned sausage meat, coated in breadcrumbs, and cooked until golden and crunchy.

Traditionally, scotch eggs are deep-fried. But the air fryer does an amazing job here – you get that same satisfying crunch with way less oil.

In a bowl, combine the pork sausage, fresh thyme leaves, ground sage, garlic powder, salt, black pepper, and ground nutmeg. Mix with your hands until the seasonings are evenly distributed. Divide the mixture into 4 equal portions.

Set up a breading station with three shallow bowls. Place the all-purpose flour in the first, beat the remaining 2 eggs in the second, and add the panko breadcrumbs to the third.

Flatten each sausage portion into a thin, even patty in the palm of your hand. Place a peeled egg in the center and carefully wrap the sausage around it, pressing the seams to seal completely. Make sure there are no gaps or thin spots.

Roll each sausage-wrapped egg in flour, shaking off the excess. Dip into the beaten egg, then press firmly into the panko breadcrumbs until evenly coated on all sides.

Tips
Get the Egg Timing Right
The 6-minute boil time is crucial here. Start your timer the moment the eggs hit the already boiling water, not when you turn the stove on. Even 30 seconds too long will give you a fully hard-set yolk instead of that nice jammy center.
And don’t skip the ice bath. If you just let the eggs sit in warm water or cool down slowly, they’ll keep cooking from the residual heat and you’ll lose that soft yolk.
Also, use eggs straight from the fridge. Cold eggs in boiling water actually makes them easier to peel later because the shell contracts slightly from the temperature shock.
Wet Your Hands Before Wrapping
Raw sausage meat is super sticky, and it will cling to your hands instead of wrapping smoothly around the egg. Wet your hands with cold water before you flatten each portion and it’ll be way easier to work with.

When you wrap the sausage around the egg, aim for an even thickness all the way around. If one side is too thin, the sausage will shrink there during cooking and the egg might poke through.
Press the seams together firmly and roll the whole thing between your palms a few times to smooth it out. Any cracks or gaps in the sausage layer will split open in the air fryer.
Don’t Skip the Flour Step
It might seem pointless to roll the sausage-wrapped egg in flour before dipping it in egg wash, but the flour is what makes the breadcrumbs actually stick. Without it, the egg wash slides right off the sausage and the panko won’t hold.
Just make sure you shake off the extra flour. If there’s too much, it creates a paste layer that can turn gummy instead of crispy.

Even if you boil them for less time upfront, the air fryer will continue cooking the yolk. If you really love a runnier center, you could try a 5-minute boil and shorten the air fry time by a minute or two, but make sure the sausage reaches 160F internally so it’s safe to eat.
