Tips
Use Very Ripe Bananas
You want bananas that have a lot of brown spots on the peel. The more brown spots, the sweeter and softer the banana is, which means more flavor and easier mashing.

If your bananas are still yellow and firm, they won’t mash smoothly and your muffins will taste bland. A good trick is to buy bananas a few days early and let them sit on the counter until they get spotty.
If you forgot to plan ahead, you can put unpeeled bananas on a baking sheet and bake them at 300°F for about 15 minutes until the peels turn black. Let them cool, then peel and mash. They won’t be quite as sweet as naturally ripened ones, but they’ll work much better than underripe bananas.
Don’t Overmix the Batter
When you add the flour, baking soda, cinnamon, and salt to the wet ingredients, stir gently just until everything comes together and there are no dry streaks left. That’s it.
